  1. Radish Hash Browns:

    • Ingredients:
      • 2 cups grated radishes
      • 1 small onion, finely chopped
      • 1 egg, beaten
      • 2 tablespoons all-purpose flour or almond flour
      • Salt and pepper to taste
      • Olive oil or butter for frying
    • Instructions:
      1. Place the grated radishes in a clean kitchen towel and squeeze out excess moisture.
      2. In a mixing bowl, combine the grated radishes, chopped onion, beaten egg, flour, salt, and pepper. Mix until well combined.
      3. Heat olive oil or butter in a skillet over medium heat.
      4. Spoon the radish mixture into the skillet, forming small patties. Flatten them gently with the back of a spatula.
      5. Cook for 3-4 minutes on each side, or until golden brown and crispy.
      6. Remove from the skillet and drain on paper towels.
      7. Serve hot as a delicious and low-carb alternative to traditional hash browns.
  2. Roasted Radish Wedges:

    • Ingredients:
      • 2 cups radishes, trimmed and quartered
      • 1 tablespoon olive oil
      • 1 teaspoon garlic powder
      • 1 teaspoon dried thyme
      • Salt and pepper to taste
    • Instructions:
      1. Preheat your oven to 400°F (200°C).
      2. In a mixing bowl, toss the radish wedges with olive oil, garlic powder, dried thyme, salt, and pepper until evenly coated.
      3. Spread the radish wedges in a single layer on a baking sheet lined with parchment paper.
      4. Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and lightly browned, stirring halfway through.
      5. Remove from the oven and transfer to a serving dish.
      6. Serve hot as a flavorful and nutritious side dish, similar to roasted potatoes.
